Job Specification

  • To lead the kitchen in the absence of the Head Chef / Executive Chef.
  • To cook up to either a rosette standard
  • To ensure consistency of dishes remains at the reputable and consistent standard, 1 rosette level.


Person Specific

  • As Sous Chef, you will come from a similar position with a credible and stable background, either from a hotel or high volume fresh food environment.
  • Must have experience in a C & B operation
  • MUST have strong ala carte experience, leading shifts and busy services.
  • You will be looking to progress your career and challenge your ability. You should have natural leadership skills and be seen as a mature, calm influence on junior chefs.
  • You should have a solid understanding of GP and keeping wastage to a minimum.
