* Busy 4*, 300 room corporate hotel situated in Manchester; part of a large group of UK based hotels.
* Hotel has multi facilities including banqueting for up to 300 daily plus busy all-day room service and bar menu and fresh food restaurant with 100 covers daily.
* This business is corporate however offers a good level of autonomy for menu / food development per property.

Job Specification
* To work alongside the head Chef and Exec Chef as well as lead the kitchen in their absence.
* To cook up to either a rosette standard or be comfortable working with fresh ingredients predominantly cooked and prepared on site.
* To ensure consistency of the kitchen/ business operation remains complaint to company standards and that all junior member of the team are well supported and led professionally.

Person Specific
* As Sous Chef, you will come from a similar position with a credible and stable background, either from a hotel or high-volume fresh food environment.
* MUST have strong hotel or conference centre experience, leading shifts and busy services.
* You will be looking to progress your career and challenge your ability and have natural leadership skills whilst being seen as a mature, calm influence on junior chefs.
* You should have a solid understanding of GP and keeping wastage to a minimum.

Head Chef - Independent 4* Hotel - Branded Culture
Package - £35-37k
Location - Birmingham (South)

* A leading independent 4* hotel in the West Midlands.
* 130 rooms
* Multi Catering facilities including restaurants, banqueting, bar, afternoon tea, weddings.
* Close to major transport networks with easy reach via public transport.

Job Specification
* Head Chef, reporting into General Manager.
* Drive the brigade for consistency and high standards.
Manage 50-50 split restaurant to C&B operations, driving a team of 7
* To ensure financial responsibility is adhered to with GP, wastage and staffing budgets met.

Person Specific
* Must have relevant Head and relatable and stable 4* Hotel backgrounds.
* Chefs with multi-facility experience will strongly be considered.
* Chefs with fresh food backgrounds AND branded experience will be strongly considered.
* Must have the ability to lead and encourage large kitchen brigades to be creative and consistent.
* You must have a dynamic character and have the command of respect within busy service sessions / conferences.
* A proactive and professional face for the business.
