Job Specification
* To lead the kitchen in the absence of the Head Chef / Executive Chef.
* To cook up to a 2 rosette standard and be comfortable working with fresh ingredients cooked and prepared from scratch.
* To ensure consistency of dishes remains at the reputable and consistent standard, 2 rosette level.

Person Specific
* As Sous Chef, you will come from a similar position with a credible and stable background, either from a hotel or high volume fresh food environment.
* MUST have rosette experience, leading shifts and busy services.
* You will be looking to progress your career and challenge your ability. You should have natural leadership skills and be seen as a mature, calm influence on junior chefs.
* You should have a solid understanding of GP and keeping wastage to a minimum.
