I am currently working with an award winning, boutique country hotel looking for an Experienced Head Chef to drive their business forwards in a stunning part of Gloucestershire.
Located within the Forrest of Dean, surrounded by acres of beautiful meadows, this stunning Boutique, Country Hotel offers approx. 20 bedrooms and serves a delicious menu, focusing on produce sourced locally within a 20-mile radius of the property. As Head Chef, you will be experienced in sourcing the finest quality free range and organic produce, making full use of the of the hotels herb and vegetable garden, making full use of the finest ingredients the area has to offer.
You will currently already be an experienced Head Chef within a quality operation using fresh produce, ideally at a one/two Rosette standard. Working alongside the General Manager/Owner, you will create and deliver exceptional dishes whilst providing every guest with the highest of standards, creating memorable experiences for all their guests.
As Head Chef, you will support and mentor the existing brigade or around 5, to continually push and develop their skills. You will have ambition, determination, drive and energy, whilst being up to date with all current food trends and want to be part of something very special.
The role will suit someone who has already established themselves successfully Senior Sous/Head Chef in a quality fresh food operation and is looking for a fresh and exciting new challenge. The role is available from April 2021.
Required Skills:
- Previous experience from a similar style operation, with a solid understanding of fresh ingredients & produce. A real passion for seasonal, local produce and a love of wild, foraged ingredients.
- Ensure good kitchen planning to enable a trouble-free service and customer satisfaction.
- Help to promote and maintain a good working environment, managing and develop a strong brigade of chefs, training, motivating, and leading by example to inspire them.
- Ability to work under pressure and a passion for constructing innovative and exciting menus.
- Be a problem solver, ready to come up with on-the-spot solutions.
- Hands on, passionate, Energetic Self-motivated individual.
- Passionate about food, standards & results.
- Manage all aspects of the day-to-day operation of the kitchen.
- Minimise wastage through proper stock control and menu development.
- Manage all Kitchen H&S Systems and procedures.
- Work to a consistently high standard in a calm manner.
The Package / Benefits / Opportunities:
- Salary around £40k+ tips, depending on experience.
