Award winning hotel & Spa - Devon
JWR is currently working with one of Devon's top-rated, award-winning Hotel & Spa's, looking to recruit an Experienced Head Chef for their Brasserie style restaurant.
Alongside the Brasserie, the Hotel boasts an award winning Three Rosette Restaurant, looking to continue to push for awards and accolades under a leading Exec chef. This is an exciting time to join the brigade and drive the Brasserie offering forwards with the support and guidance of an experienced professional.
You will currently already be an experienced Head Chef within a quality operation using fresh produce, ideally to Rosette standard. Working alongside the Exec Chef & F&B Manager, you will create and deliver exceptional dishes whilst providing every guest with the highest of standards, creating memorable experiences
As Head Chef, you will support and mentor the existing brigade to continually push and develop their skills. You will have ambition, determination, drive and energy, whilst being up to date with all current food trends and want to be part of something very special.
The role will suit someone who has already established themselves successfully Senior Sous/Head Chef in a quality fresh food operation and is looking for a fresh and exciting new challenge.
Required Skills:
- Previous experience from a similar environment, with a solid understanding of fresh ingredients & produce. A real passion for seasonal, local produce and a love of quality ingredients
- Manage all aspects of the day to day operation of the kitchen.
- Run the kitchen to the highest standards at all times,
- Minimise wastage through proper stock control and menu development
- Manage all Kitchen H&S Systems and procedures
- Manage and develop a strong brigade of chefs, training and motivating them, and leading by example to inspire them.
- Work to a consistently high standard in a calm manner
