Job: Restaurant Manager - Rosette Restaurant | Luxury Boutique Hotel
Location: Cheltenham, Gloucestershire | £40,000 + Bonus
Full-Time (45 or 40 hrs/week, your choice)
Are you an experienced Restaurant Manager or an ambitious Assistant Manager ready to step up into a prestigious role? This is a rare opportunity to lead a multi Rosette-awarded restaurant within a luxury independent boutique hotel, while also overseeing the Spa Brasserie, two private dining rooms, and a 50-cover bar and terrace.
With an impressive £1 million+annual F&B turnover, this is a hands-on position where you'll be at the heart of service, working alongside an Assistant Manager, Supervisors, and a team of 15-20.

The Role
* Take full ownership of the restaurant - shaping standards, service style, and guest experience.
* Lead daily operations in partnership with the Assistant Restaurant Manager & Supervisors, ensuring smooth service across all outlets.
* Inspire, train, and develop a talented team of 15-20, setting the tone for exceptional hospitality.
* Balance your week:
o Thurs-Sat: Service-focused shifts (Thursday lunch through to Saturday dinner).
o Tues & Wed: Planning, administration and ordering.
o Sun & Mon: Guaranteed days off.

What We're Looking For
* Experience in fine dining or Rosette-standard restaurants (at management or assistant management level).
* A background in luxury boutique or independent hotels.
* Strong wine and beverage knowledge.
* Hands-on, guest-focused leadership style.
* Confidence in managing and motivating teams of 15-20.
* Flexibility to work evenings and weekends.
