Experienced Restaurant Manager -Rosette Restaurant | Boutique Hotel Setting
Location: Cheltenham, Gloucester
Salary: £40,000 per year plus Bonus - Full Time (45 hours per week, option to reduce to 40)
We are seeking a passionate and accomplished Restaurant Manager to lead our prestigious Rosette Restaurant, nestled within a luxury, independent boutique hotel. This is a hands-on leadership role with full ownership of the restaurant operation, while also overseeing F&B outlets including a Spa Brasserie, private meeting rooms, and a bar & terrace.
With an annual F&B turnover of over £1million, this is an exceptional opportunity for an experienced manager looking to take the next step in a rewarding, high-standard environment.
Key Responsibilities:
* Take full ownership of the day-to-day running of the Rosette Restaurant
* Oversee operations across all F&B outlets: Brasserie, bar & terrace, and private dining rooms
* Lead, train and inspire a team of 15-20, including an Assistant Restaurant Manager and 4 Supervisors
* Manage all service shifts (primarily Thursday-Saturday), ensuring smooth, elevated guest experiences
* Responsible for ordering, stock control and administrative duties (Tuesday/Wednesday)
* Drive team development and maintain excellent standards in service, cleanliness, and presentation
* Collaborate with the Head Chef and wider management team to uphold the hotel's luxury ethos
Essential Requirements:
* Proven experience managing a fine dining restaurant at Rosette level or equivalent
* Background in luxury boutique or independent hotels
* Strong leadership skills, with experience managing teams of 15-20 staff
* A genuine passion for hospitality with a hands-on, lead-by-example approach
* Exceptional wine and beverage knowledge, with a confident and curated approach to drinks service
* Comfortable working evenings and weekends as part of the core service schedule
