Luxury 5-Star Hotel & Estate | Scotland
JWR is recruiting an exceptional Head Chef to lead the culinary operation of a prestigious 5-star hotel and estate in Scotland.
This is a broad, high-profile role overseeing multiple dining experiences including fine dining, brasserie service, afternoon tea, room service, spa dining, private events and large-scale functions.
The successful candidate will help shape the culinary identity of the estate, working closely with the senior leadership team while leading and developing a talented kitchen brigade.The Package

The Role
You will take responsibility for food production, standards and commercial performance across the estate, including:- Leading and developing the kitchen brigade
- Delivering consistently high standards across multiple outlets
- Creating seasonal, commercially successful menus
- Managing GP, food cost, wastage and kitchen budgets
- Driving training, coaching and succession planning
- Maintaining strong HACCP, food safety and H&S standards
- Developing SOPs and consistent kitchen processes
- Building strong supplier relationships
- Supporting weddings, private events and large-scale functions
- Working closely with the wider hotel and F&B leadership teams
The brief requires a chef who can combine creativity, operational excellence, financial awareness and strong leadership.
Requirements
We are looking for an established senior chef with:- Minimum 2 AA Rosette experience
- Previous experience within a 5-star environment
- Strong Head Chef or senior culinary leadership experience
- Experience managing multi-outlet operations
- Excellent menu development skills
- Strong knowledge of GP, food cost and budgeting
- Proven ability to recruit, train and inspire kitchen teams
- Excellent food safety and HACCP knowledge
- A hands-on, organised and adaptable leadership style
The successful candidate will be expected to drive quality, consistency and innovation across the estate while building a positive, high-performing kitchen culture.
Recruitment Process
- First interview
- Practical cook-off
- Final Teams interview with renowned chef
Interviews and cook-offs are planned for August, with the successful candidate ideally starting towards the end of September before completing a handover with the outgoing Head Chef during October.
