Luxury Family Hotel - Cornwall

JWR is excited to be working with a leading, independent, and forward-thinking collection of Luxury Hotels across the South West, looking to recruit experienced Chef de Parties' for their property in a stunning Cornish location.

The Hotel is currently undergoing extensive refurbishment and investment to re-position itself as one of the leading 4* Luxury family hotels in the area. Work is due to be completed early next year, and the position is available from March 2021.

The seven-figure investment will see improvements across all areas of the property including bedrooms, public areas, kitchen, bar & restaurant and additional facilities.

As Chef de Partie, reporting to the Head and Sous Chef, you will play a key part in developing and driving the food offer forwards as part of a brand-new Kitchen team launching in early Spring 2021. You will already be an experienced Chef de Partie, with previous experience in a quality driven, fresh food kitchen, looking for their next challenge.

As Chef de Partie in this talented team you will support the brigade in delivering modern British and European cuisine using the freshest local produce. You will have ambition, determination, drive and energy, whilst being up to date with current food trends and want to be part of something special whilst continuing to develop your own skills and knowledge.

The role will suit someone who has experience at a similar level in a quality fresh food operation and is looking to broaden their experience and responsibilities. You will need to be hands-on and want to continue to develop your skills within the kitchen whilst helping to coach and develop junior chefs.

Required Skills:

  • Previous experience from a similar environment, with a solid understanding of working with fresh ingredients & produce
  • Support the Brigade with the day to day operation of the kitchen
  • Run the kitchen to the highest standard at all times
  • Ensure that all dishes are prepared and presented in accordance with the Head Chef's directions
  • Minimise wastage through proper stock control and menu development
  • Manage all Kitchen H&S Systems and procedures
  • Knowledgeable and up to date with current trends, working to a consistently high standard in a calm manner, Passionate about quality food, standards & results.
