JWR are excited to be working with one of Jerseys most recognisable hotels, looking to recruit an enthusiastic, creative, passionate and confident Sous Chef to lead the Brigade at their stunning property on the Channel Islands.

As Sous chef, taking on this rare opportunity, you will be required to support the Head Chef and kitchen team, including assisting with the development of the breakfast, lunch and dinner menus to the standard expected by their high volume of business & leisure guests.

You will currently already be an experienced Sous Chef within a quality operation using fresh produce and will assist the Head Chef in creating and delivering exceptional menus, whilst providing every guest with the highest levels of standards, creating memorable experiences.

As Sous Chef, you will support and mentor a brigade of up to 14 chefs, continually pushing to develop their skills. You will have ambition, determination, drive and energy, whilst being up to date with all current food trends and want to be part of something very special.

The role will suit someone who has already established themselves successfully as a Sous Chef in a quality fresh food operation and is looking for a fresh and exciting new challenge. The role is available from February 2021 with live-in.

The hotel offers two restaurants, one elegant and relaxed with amazing views over the harbour serving breakfast and dinner as well as a more informal brasserie style café/bar operation which is open all day. The Hotel also benefits from a strong C&B trade, catering for up to 200 people for weddings and events.

Required Skills:

  • 2+ years previous experience as a Sous Chef from a quality fresh food operation, with a solid understanding of fresh produce & seafood.
  • Hands on, passionate, energetic & self-motivated individual.
  • Support with managing all aspects of the day to day operation of the kitchen, always operating to the highest of standards.
  • Control ordering & wastage through effective stock control.
  • Manage all kitchen H&S systems and procedures, adhering to food safety legislation.
  • Support with managing and develop a strong brigade of chefs, training and motivating them, leading by example to inspire.
  • Work to a consistently high standard in a calm manner, building excellent working relationships with the team and other departments across the hotel.
  • Ensure good kitchen planning to enable a trouble-free service and customer satisfaction.
  • Ability to work under pressure with a proven track record in delivering high quality dishes in a time pressured environment.
  • Be a problem solver, ready to come up with on the spot solutions.
